Sourdough Cinnamon Roll Focaccia

Sourdough & Cinnamon Rolls are two popular treats, but what if you could blend them into a single delightful dish? This recipe offers the chewy, tangy bite of sourdough, mixed with the sweet deliciousness of brown sugar & cinnamon. These may be the best thing I have ever baked!


Ingredients

  • 100 grams active sourdough starter

  • 375 grams filtered water (room temp)

  • 250 grams AP Flour

  • 250 grams Bread Flour

  • 9 grams sea salt

  • 1 cup brown sugar

  • 1 Tbsp Cinnamon


Sourdough Starter

  • Feed your starter 4-6 hours before you start to bake


Make Dough

  • Mix water and starter until milky color

  • Add flours

  • Mix till shaggy

  • Rest 30-min, add salt

  • Perform stretch & folds, rest 30-min

  • Repeat stretch, fold, rest 4 times

  • Allow to bulk ferment overnight (allow it to overproof)


The next morning

  • Preheat oven 425°

  • Oil & line a 9x13 pan with olive oil & parchment

  • Transfer dough into 9x13

  • Sprinkle with about 1/3 of the cinnamon & sugar

  • Fold one side a third of the way to center, sprinkle with a bit more cinnamon & sugar, fold the other side to cover

  • Flip dough over, seam side down

  • Cover & let rest 1-hr

  • Cover with remaining cinnamon & sugar

  • Dimple dough

  • Bake at 425° for 25-mins

  • Remove from oven onto wire rack

  • Cool for 1-hr, cut & enjoy
