
Sourdough Starter Day 11 and beyond

Over the past 11-days you may have noticed some activity and you may have a slow-starter, who is testing your patience with your sourdough journey, be patient. In the next few weeks you are going to start to notice some amazing things happening.
Day 11 and Beyond Process
Discard half into a glass sealable jar, store in fridge. This will later be used to make delicious sourdough discard treats.
Feed with the same ratio as you have been 1:1:1
Cover and observe
Rise and Fall
You will begin to notice the starter will rise and develop bubbles and activity throughout the day/night following a feeding. As it becomes more established you will notice a pattern with the rise and fall, generally hitting it's peak around 4-6 hours. It is important to note the timing of your starter, as we will be pulling from it at it's peak when we begin to bake.
It is normal for it to rise and then fall, you may even notice it rise, fall, rise and fall again. You will now it is rising and falling by the streaks and markings on the inside of the glass from the starters activity.
Goal
You want your starter to double in size around 4-6 hours for optimal baking. In some areas that are colder, or during winter months, your starter may need some extra time to develop and will rise over 6-8 hours, which again, is why it is important to monitor the timing of it's activity. Once your starter is consistently rising you are ready to bake!
