Sourdough Starter Day 3 - 10

Yesterday you may have noticed some activity as your starter began to develop. Some may even note the starter double in size and fall back down. Today we plan to discard, so it is super important to note when your starter begins to fall, you do not want to discard until it begins to go back down.


When we bake, we will also bake at it's peak rise, so now is the perfect time to start to learn it's patterns. Consider keeping a chart or notebook that includes when you feed and how so that you can adapt the process as needed.


Day 3 Process:

  1. Note the height of the starter and move the rubberband to match it

  2. Discard half of the counter into the trash can

  3. Using scale (if available, not necessary, but I find it helps in the beginning) measure 60-grams AP unbleached flour and 60-grams Filtered water

  4. Stir well to combine

  5. Scrap down sides with a rubber spatula

  6. Cover and observe 24-hrs


Days 3-10 you will follow the same process, discarding half into the waste (we will safe it later) and feedings a 1:1:1 ratio


Be patient, you may not notice any activity for 2-3 weeks, or you may notice activity for a day or two and then nothing, BE PATIENT, each sourdough starter will behave differently.
