Sourdough Discard Rolls

These Sourdough Discard Rolls will make the perfect edible center piece for your Holiday Tables!


Ingredients

  • 1/2 cup warm milk

  • 2 tsp instant yeast

  • 1 Tbsp sugar

  • 340 grams AP flour

  • 200 grams sourdough discard

  • 1-egg

  • 1tsp salt

  • 5Tbsp + 2Tbsp melted butter


Step-by-Step

  • Combine milk, yeast and sugar in stand mixer

  • Add flour, sourdough, egg and salt

  • Begin to mix in low, add in butter 2 Tbsp

  • Increase speed to medium and mix 2-minutes or until shaggy dough forms

  • Remove dough from mixer and hand knead 3-4 minutes or until smooth

  • Transfer to larger oil lined glass bowl and allow to rise, covered, 90-minutes or until doubled in size

  • Turn dough out and divide in 12

  • Shape rolls

  • Soak Bakers twine in oil and remove excess

  • Wrap twine to form pumpkin

  • Place on baking sheet and allow to rise, covered, 60-minutes

  • Preheat oven to 375°

  • Brush with 2-Tbsp butter and bake at 375° 20-25 minutes

  • Remove twine and enjoy!
